7 Quick Takes


1. I read Jennifer's Quick Takes and laughed and laughed, first about randomness, then about messiness,then about Instagram.  I see those Instagram photos on Facebook all the time and have no idea what it is. I just clicked over there for a nanosecond and it seems you need to have a smart-type phone.  I do not have one of those.  Nor do I encounter cute things to take pictures of on any sort of a regular basis.

2.  My office has been overtaken by VBS.  I have beach balls, hula hoops, pool noodles and an overabundance of cotton balls in every corner.  Not to mention the wipes and saint cards and food and ... I am attempting to gather and organize today by each day.  Thankfully my office is big enough to bring in a six foot table so I have plenty of space to lay it all out neatly.  My brain has also been overtaken by VBS.  I haven't done this in a few years so it is taking me longer than usual to get it all together.  We have 16 days before we soar to the SKY!  Trust God!

3.  I miss my children. Is it harder for them to grow up or us to accept it?

6.  There are white flies and black flies and mosquitoes outside and inside my office.   UGH!

7.  A little girl was making name tags for her family at our parish picnic.  First hers, then her brother's, then her mom's.  Her mom and I watched to see what she would write for her mom.  It said "mom" and that was that!

Happy Birthday in Heaven

It has been almost a year since my dear friend died. Today is her birthday.  Last year at this time we were very busy practicing our flash mob dance.  I know we were all praying for a miracle.  We did not get our miracle, but we all received a very special gift.
The gift of friendship with a wonderful person, the gift of love and joy and peace as we journeyed with her from this life into the next. Diane is no longer here with us physically, but I see her and feel her.  I hold the memories close, the pain I try to let go.
I don't know what happens in heaven on this day but here we are reminded that sometimes life is way too short and very unfair.  Oh, yes, I believe you are in a much better place.  I grieve not so much that you are not here but that we are not there with you.

7 Quick Takes

More Quick Takes are over at Betty Beguiles, subbing for Conversion Diary
1.  We began decorating for Vacation Bible School
2.  Last Sunday was First Communion and we were featured in the local paper:The Shiny Sheet  As one of my friends said, it is nice that we can get some positive press about the Church.  I just wish they would give my whole quotes, so my sentences don't end in"thing", but I figure, it's positive and a way to evagelize and educate.  I'm in with that thing.

3.  This Quick Take had to be deleted, since I was advising you on the Ascension and starting the Pentecost Novena. Clearly having time issues.

4.  I finally turned my desk calendar to May. Sometimes I scare myself.

5.  I am still dealing with fallout of my email being hacked.  I cannot imagine what it must be like if someone steal your identity or figures ways to hack into something even more important, like your bank account.  I am trying to use unique, more complicated passwords but I have a hard time storing those in my brain but if I have them on paper or on my computer, it seems like it is inviting trouble.  This is when technology seems like way too much trouble.

6.  My lovely, spacious office is quite the mess right now.  3 of the 4 corners are filled with 'stuff' either from past events or for future events.  My goal today is to go through all the corners and the stack of papers and put some order back into this place.  

7.  I was more surprised at people's surprise that Obama is fine with gay marriage than with the announcement itself.  It's big news though, my daughter heard way over in Australia!  What confuses me is people I thought were grounded faithful Christians and Catholics who also agree with his opinion.  I asked my husband his thought on one brief reason why it is wrong.  "It goes against natural law."

Cooking

I have some new recipes in my repertoire.

Shrimp and Spaghetti Squash

1 spaghetti squash,
2 dozen medium shrimp, cleaned, peeled, etc..
1 onion, thinly sliced
2 cloves garlic
1 tomato, coarsely chopped

Cook the squash.  I usually cut it in half, scoop out the seeds, place it, skin side up, in a lidded saucepan with an inch of water, and boil it for about 20 minutes.  Remove from pan and let cool.  Meanwhile, saute onions and garlic in a bit of olive oil until soft and lightly browned.  While it is cooking, use a fork to remove the spaghetti squash from the shell.  Cook shrimp and then add the tomato.  Add squash and mix until combined.  Add salt, pepper, parsley.
Note:   I also added about 1/4 cup white wine with the shrimp, but it's optional.

Stuffed Portabella Mushrooms


1/2 lb ground meat (use beef, lamb, veal, turkey.  I used veal as it was on sale)
4 mushrooms, stems removed
1 small onion diced
2 cloves garlic,  minced
3 cups fresh spinach
1/2 cup tomato sauce
fresh grated parmesan cheese

Cook spinach,squeeze dry  ( wait until it cools though) and then chop it.
Brown meat and add onions and garlic and chopped stems.  Meanwhile, (have your husband) grill the mushrooms.  When the meat mixture is cooked through, add the spinach and tomato sauce.  Place mushroom caps in a pan, cover with meat mixture and cheese.  Broil until heated through and cheese is melted.  I added more cheese before serving.

7 Quick Takes

More Quick takes over at Conversion Diary!

1.  I have noticed many more police cars on the road as I drive to work every morning.  This morning I was in a 70 MPH zone, going about 65 MPH due to traffic volume.  I notice a police car turn on his lights and pull over a car in front of me all the way in the left lane.  The cars ahead of me brake.  Why?Why?Why?  
2.  This Sunday is First Communion at work.  We have fourteen children; 7 boys, 7 girls.  Our pastor has the children sit and receive communion with their families.  We did this with our daughter (same pastor, different parish) and it was so beautiful and meaningful.  I hope all of our families see the blessing in this on Sunday.
3.  Speaking of work, I am in the throes of two major projects.  Planning and organizing our Vacation Bible School and planning our faith formation program for next year.  VBS is coming along nicely.  The new program not as easily.  It's difficult to make decisions that satisfy all the requirements, take into consideration families' needs, and work in a small parish program.  Research, discussion and prayer; research, discussion and prayer.
4.  Tomorrow is Cinco de Mayo.  If you need a cheater Margarita recipe, here you go:
can of frozen limeade, 12 oz tequila, 24 oz Sprite, one bottle Corona Light (thanks to Sarah)
It is really, really good!  Or not really a Margarita, but still most excellent, Fresca and Tequila.  Ole!
5. I speak to our local paper, The Shiny Sheet as it is know, far more than I would have ever thought possible.  It seems religion news is newsworthy on the island.
6.  I have a shoe problem.  I leave them wherever I take them off in the house.  This morning I looked in the family room and saw three pair of pumps, each worn this week.  In my bedroom there are a pair of flip-flops and slippers next to my dresser and probably another pair of flip-flops in my woman cave.  I think I need to break this habit; I am annoying myself.
7.  A quote from Catherine of Siena:  "  When the soul is lifted up by a great, yearning desire for the honor of God and the salvation of souls, it practices the ordinary virtues and remains in the cell of self-knowledge, so that it may know better God's goodness toward it.  It does this because knowledge must come before love, and only when it has attained love, can it strive to follow and to clothe itself with the truth."

Hacked


Last weekend my email was hacked into by someone who proceeded to send out an email saying I was stranded in the Philippines after having been mugged at gunpoint.  I’m sure many of you have seen some variation of this come across your inbox.  It was my work email, which made it a bit more awkward. 
I spent time Saturday repairing some damage and then Monday morning I began again, after finding out that all of my contacts and old emails were gone as well. 
It was a pretty time consuming process to set up a new email, change my address in many, many places, add contacts, and I know I am still not done.
I have started to reflect on the whole thing though in light of my spiritual life.  Lately, I have been searching to find my peace, my center.  My usual ways have not been working and having heard and said the phrase “when you feel distant from God, it’s you that has moved, not him” enough that I believe it to be true, I need to do something. 
I want to start fresh, wipe the slate clean like I am forced to do with this email debacle.
I must go back to what I know, back to what feeds me and centers me, but with new features I have to learn.  I sit and reflect on what components are necessary and which are optional.
Necessary:  quiet, scripture, writing, reflection, sharing, reading
Optional:  music, traditional or rote prayers, small gatherings with faith-filled friends
I am still working on this plan, but I like the idea of starting from scratch and testing things before I make a decision.  It reminds me again that conversion comes in stages and growing in faith is a lifelong endeavor.
My spiritual life has been hacked but I will seek out my new address and be close to God again.
