Bread

I made 100% whole wheat bread on Sunday. It turned out just as wonderful as I remembered. Very simple, especially if you have a stand mixer with a dough hook!

2 1/2 cups warm water
2 tablespoons brown sugar or honey
2 packages yeast
6 cups whole wheat flour

Dissolve sugar in water, add yeast.
When it bubbles, add 2 cups of flour, then slowly add 3 more cups, as it comes together. Add the last cup if needed. Place in bowl, cover and let rise in a warm spot for 2 hours or so until doubled. Punch down, shape and place into 2 large loaf pans, cover and let rise 1 hour. Bake at 350 for 1 hour.
