Ginger Soy Chicken

1 lb chicken thighs, cut into strips
1/2 cup roughly chopped red onion
1 cup water
3 tablespoons light soy sauce
2 teaspoons ground ginger

Put all ingredients into a saucepan, cover and simmer until chicken is cooked.
Serve on buns or over rice with broccoli slaw.

Very quick, easy and tasty.
